In 2000, I was diagnosed with ulcerative colitis, a life-destroying intestinal disease. I began searching for a drug-free way to treat my condition and felt that changing my diet could be the key to controlling the disease that had literally taken my life away.
During my search for answers, I was directed to the Specific Carbohydrate Diet (SCD), which is outlined in
Breaking the Vicious Cycle by Elaine Gottschall. This book taught me the link between food and intestinal diseases, and how to make what I ate my ally, not my enemy.
Following the SCD meant eliminating all complex carbohydrates from my diet, including refined sugar. This initially seemed daunting, but my health was well worth it. I began to cook and bake with some of the foods I was allowed: nuts, seeds, eggs, meat, vegetables, fruit and honey — within days I felt better. I am now in remission and completely drug-free.
It is this journey to health through diet that inspired Grain-Free JK Gourmet’s delicious, nutritious products and the two bestselling cookbooks that I co-authored with Jenny Lass: Grain-Free Gourmet: Delicious Recipes for Healthy Living (Whitecap Books, 2005) and Everyday Grain-Free Gourmet: Breakfast, Lunch and Dinner (Whitecap Books, 2008).
